These Meyer Lemon Bars are the perfect balance of tangy and sweet with a buttery shortbread crust and luscious citrus filling.

- 1 cup unsalted butter, softened
- 2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/4 tsp salt
- 2 cups granulated sugar
- 1/4 cup all-purpose flour
- 4 large eggs
- 2/3 cup fresh Meyer lemon juice
- 1 tbsp Meyer lemon zest
- Powdered sugar, for dusting
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan and line with parchment paper.
- In a bowl, mix 2 cups flour, 1/2 cup powdered sugar, and salt. Cut in the softened butter until mixture resembles coarse crumbs.
- Press the mixture evenly into the bottom of the prepared pan to form the crust.
- Bake the crust for 20 minutes or until lightly golden. Remove from oven and set aside.
- In another bowl, whisk together granulated sugar and 1/4 cup flour. Add eggs, Meyer lemon juice, and zest. Whisk until smooth.
- Pour the lemon mixture over the warm crust.
- Bake for an additional 20–25 minutes, or until the filling is set and the top is lightly golden.
- Let cool completely in the pan. Dust with powdered sugar before cutting into bars.
Notes
Use fresh Meyer lemons for best flavor. Chill before cutting for cleaner slices.
