These creamy Meyer Lemon Cheesecake Bars have a tangy citrus twist and a buttery graham cracker crust that makes them irresistible.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp unsalted butter, melted
- 16 oz cream cheese, softened
- 2/3 cup granulated sugar
- 2 large eggs
- 2 tbsp Meyer lemon zest
- 1/3 cup fresh Meyer lemon juice
- 1 tsp vanilla extract
- Powdered sugar, for garnish
Instructions
- Preheat oven to 325°F (165°C). Line an 8×8 inch baking pan with parchment paper.
- In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press evenly into the bottom of the pan.
- Bake crust for 10 minutes. Remove and let cool slightly.
- In a large bowl, beat cream cheese and 2/3 cup sugar until smooth and creamy.
- Add eggs one at a time, beating well after each. Stir in lemon zest, juice, and vanilla.
- Pour cheesecake filling over the crust and smooth the top.
- Bake for 25–30 minutes or until the center is just set.
- Cool completely, then refrigerate for at least 3 hours or overnight.
- Dust with powdered sugar before slicing into bars.
Notes
For best results, use room temperature cream cheese and eggs. Chill thoroughly before slicing.
