Description

Buttery, bright, and perfectly crumbly squares filled with tangy Meyer lemon curd and topped with a crunchy macadamia crumble.


Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup unsalted butter, cold and cubed
  • 1 cup macadamia nuts, chopped
  • 1/2 teaspoon salt
  • 1 cup Meyer lemon curd (store-bought or homemade)
  • Zest of 1 Meyer lemon

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment.
  2. Mix flour, sugar, brown sugar, and salt in a bowl.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the chopped macadamia nuts and lemon zest.
  5. Press two-thirds of the mixture into the bottom of the pan.
  6. Spread the Meyer lemon curd evenly over the crust.
  7. Sprinkle the remaining crumble mixture on top.
  8. Bake for 30–35 minutes or until golden brown.
  9. Cool completely before slicing into squares.

Notes

For extra brightness, add an additional teaspoon of Meyer lemon zest to the crumble.
