Mikey’s Meatloaf Recipe

Description

A hearty and flavorful classic meatloaf, tender on the inside with a savory glaze on top.


Ingredients

  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 1 cup milk
  • 2 large eggs
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1/2 cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • 1/4 cup fresh parsley, chopped
  • Glaze: 1/2 cup ketchup, 2 tbsp brown sugar, 1 tbsp Dijon mustard

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the breadcrumbs and milk. Let soak for 5 minutes.
  3. Add the ground beef, eggs, onion, garlic, ketchup, Worcestershire sauce, salt, pepper, thyme, paprika, and parsley. Mix until just combined.
  4. Shape the mixture into a loaf and place it on a parchment-lined baking sheet or loaf pan.
  5. In a small bowl, whisk together ketchup, brown sugar, and Dijon mustard for the glaze.
  6. Spread half of the glaze over the meatloaf.
  7. Bake for 45 minutes, then spread the remaining glaze on top.
  8. Return to the oven and bake for another 15–20 minutes, or until the internal temperature reaches 160°F (71°C).
  9. Let rest for 10 minutes before slicing and serving.

Notes

For extra flavor, try mixing half beef and half ground pork. Leftovers make great sandwiches.
