Ingredients

- 50 g Red Onion
- 200 g Canned Peach Slices in Juice – including some juice
- 75 g Red Bell Pepper
- 200 g Cherry Tomatoes
- 10 g Fresh Coriander (Cilantro)
- 1 tsp Garlic Paste
- 2 tsp Sea Salt Flakes
- 1 tsp Lemon Juice
Instructions
- Finely dice the red onion, red bell pepper, and cherry tomatoes.
- Roughly chop the canned peach slices, keeping some juice for added flavor.
- Mix all chopped ingredients in a bowl along with the peach juice.
- Add the garlic paste, sea salt flakes, and lemon juice.
- Finely chop the fresh coriander and stir it into the mixture.
- Let the salsa sit for 10–15 minutes before serving to blend the flavors.

Best served chilled with tortilla chips or as a topping for grilled chicken or fish.
