Description

Savory mini meatloaf muffins, tender on the inside and topped with a tangy ketchup glaze, perfect for weeknight dinners or meal prep.


Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 1 egg
  • 2 tbsp ketchup (plus more for topping)
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
  2. In a large bowl, combine breadcrumbs and milk. Let sit for 5 minutes to soften.
  3. Add ground beef, onion, egg, ketchup, Worcestershire sauce, garlic powder, salt, and pepper. Mix until just combined.
  4. Divide mixture evenly into muffin tin cups, pressing lightly.
  5. Top each muffin with a small spoonful of ketchup.
  6. Bake for 20–25 minutes, or until cooked through and internal temperature reaches 160°F (70°C).
  7. Let rest for 5 minutes before serving.

Notes

Serve with mashed potatoes or roasted veggies for a complete meal. These also freeze well for meal prep.
