Savory mini meatloaf muffins, tender on the inside and topped with a tangy ketchup glaze, perfect for weeknight dinners or meal prep.

- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/2 cup milk
- 1 small onion, finely chopped
- 1 egg
- 2 tbsp ketchup (plus more for topping)
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
- In a large bowl, combine breadcrumbs and milk. Let sit for 5 minutes to soften.
- Add ground beef, onion, egg, ketchup, Worcestershire sauce, garlic powder, salt, and pepper. Mix until just combined.
- Divide mixture evenly into muffin tin cups, pressing lightly.
- Top each muffin with a small spoonful of ketchup.
- Bake for 20–25 minutes, or until cooked through and internal temperature reaches 160°F (70°C).
- Let rest for 5 minutes before serving.
Notes
Serve with mashed potatoes or roasted veggies for a complete meal. These also freeze well for meal prep.
