Ingredients

- 1 sheet puff pastry, thawed
- 1/2 cup cooked salmon, flaked
- 3/4 cup shredded cheese (cheddar or Swiss)
- 1/4 cup finely chopped green onions
- 1/2 cup milk
- 1/2 cup heavy cream
- 2 eggs
- Salt and pepper to taste
- Butter or spray for greasing
Instructions
- Preheat oven to 180°C (350°F).
- Lightly grease a muffin tin.
- Cut puff pastry into small squares and press into each muffin cup.
- Divide salmon, cheese, and green onions evenly into each cup.
- In a bowl, whisk together milk, cream, eggs, salt, and pepper.
- Pour egg mixture over the fillings until nearly full.
- Bake for 20–25 minutes or until the quiches are puffed and golden.
- Let cool slightly before removing from tin and serving.
Notes
Great served warm or at room temperature. You can use smoked salmon for a bolder flavor.
