  • 3/4 cup butter, softened
  • 3/4 cup light brown sugar
  • 1 egg, room temperature
  • 1 1/2 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips
  • 1/2 cup red, white and pink M&M’s
  • 1/41/3 cup pink and white sprinkles
  • Frosting:
  • 1/2 cup butter, softened
  • 2 1/2 cups powdered sugar
  • 45 Tablespoons cream or milk
  • 1 teaspoon vanilla extract
  • Pink food coloring

Instructions

  1. Preheat oven to 350°F (175°C). Grease a muffin tin or line with parchment liners.
  2. In large bowl, cream together butter and brown sugar until fluffy. Beat in egg and vanilla.
  3. Mix in flour, cornstarch, baking soda, and salt until just combined.
  4. Fold in chocolate chips, M&M’s, and sprinkles (reserve some for topping).
  5. Scoop 1/4 cup dough into each muffin cup. Bake 12-14 minutes until edges are golden.
  6. Let cool completely in pan. Meanwhile, make frosting by beating butter until creamy.
  7. Gradually add powdered sugar, then cream/milk until fluffy. Mix in vanilla and pink food coloring.
  8. Pipe frosting onto cooled cookie cakes. Decorate with reserved sprinkles and M&M’s.

Notes
