- Cookie Cake:
- 3/4 cup butter, softened
- 3/4 cup light brown sugar
- 1 egg, room temperature
- 1 1/2 teaspoon vanilla extract
- 2 cups all purpose flour
- 2 teaspoons cornstarch
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup chocolate chips
- 1/2 cup red, white and pink M&M’s
- 1/4 – 1/3 cup pink and white sprinkles
- Frosting:
- 1/2 cup butter, softened
- 2 1/2 cups powdered sugar
- 4 – 5 Tablespoons cream or milk
- 1 teaspoon vanilla extract
- Pink food coloring
Instructions
- Preheat oven to 350°F (175°C). Grease a muffin tin or line with parchment liners.
- In large bowl, cream together butter and brown sugar until fluffy. Beat in egg and vanilla.
- Mix in flour, cornstarch, baking soda, and salt until just combined.
- Fold in chocolate chips, M&M’s, and sprinkles (reserve some for topping).
- Scoop 1/4 cup dough into each muffin cup. Bake 12-14 minutes until edges are golden.
- Let cool completely in pan. Meanwhile, make frosting by beating butter until creamy.
- Gradually add powdered sugar, then cream/milk until fluffy. Mix in vanilla and pink food coloring.
- Pipe frosting onto cooled cookie cakes. Decorate with reserved sprinkles and M&M’s.
