Description

A comforting and simple chicken casserole made with juicy boneless chicken breasts and a creamy, flavorful rice base.


Ingredients

  • 4 skinless, boneless chicken breasts
  • 2 cups long-grain white rice
  • 2 cups chicken broth
  • 1 (15 ounce) can cream of chicken soup
  • 1 (15 ounce) can cream of mushroom soup
  • ½ yellow onion, chopped
  • ½ red bell pepper, chopped
  • ¼ cup chopped fresh oregano
  • 1 ½ teaspoons all-purpose seasoning

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Lightly coat a 9×13 inch baking dish with cooking spray.
  3. In the baking dish, mix together the rice, chicken broth, cream of chicken soup, cream of mushroom soup, onion, red bell pepper, oregano, and all-purpose seasoning.
  4. Place the chicken breasts on top of the rice mixture.
  5. Cover the dish tightly with aluminum foil.
  6. Bake for 1 hour and 15 minutes without removing the foil.
  7. Remove from oven and let rest for 5 minutes before serving.

Do not peek while baking — keeping it tightly covered is key to ensuring the rice cooks properly and absorbs all the flavors.
