- 4 skinless, boneless chicken breasts
- 2 cups long-grain white rice
- 2 cups chicken broth
- 1 (15 ounce) can cream of chicken soup
- 1 (15 ounce) can cream of mushroom soup
- ½ yellow onion, chopped
- ½ red bell pepper, chopped
- ¼ cup chopped fresh oregano
- 1 ½ teaspoons all-purpose seasoning
Instructions
- Preheat the oven to 350°F (175°C).
- Lightly coat a 9×13 inch baking dish with cooking spray.
- In the baking dish, mix together the rice, chicken broth, cream of chicken soup, cream of mushroom soup, onion, red bell pepper, oregano, and all-purpose seasoning.
- Place the chicken breasts on top of the rice mixture.
- Cover the dish tightly with aluminum foil.
- Bake for 1 hour and 15 minutes without removing the foil.
- Remove from oven and let rest for 5 minutes before serving.
Notes
Do not peek while baking — keeping it tightly covered is key to ensuring the rice cooks properly and absorbs all the flavors.
