Description

A classic Southern favorite featuring juicy ripe tomatoes, creamy mayo, and melted cheese in a flaky pie shell.


Ingredients

  • 1 9-inch frozen deep dish pie shell
  • 3 large ripe tomatoes, cut into chunks (about 3 to 4 cups)
  • ¾ cup good quality mayonnaise (I like Duke’s)
  • 1 cup shredded sharp cheddar
  • 1 cup shredded mozzarella
  • Large handful of fresh basil, chopped or thinly sliced (about ¼ cup)
  • Kosher salt and pepper, to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Blind bake the pie shell for 10 minutes, then set aside to cool slightly.
  3. Pat the tomato chunks dry with paper towels to remove excess moisture.
  4. Layer tomatoes in the pie shell and season with salt and pepper.
  5. Sprinkle chopped basil evenly over the tomatoes.
  6. In a bowl, mix the mayonnaise, cheddar, and mozzarella until combined.
  7. Spread the cheese mixture over the tomatoes and basil.
  8. Bake for 30–35 minutes or until the top is golden and bubbly.
  9. Allow to cool for 10–15 minutes before slicing and serving.

Notes

Perfect served warm or at room temperature. Use ripe but firm tomatoes for best results.
