Description
A classic Southern favorite featuring juicy ripe tomatoes, creamy mayo, and melted cheese in a flaky pie shell.
Ingredients
Scale
- 1 9-inch frozen deep dish pie shell
- 3 large ripe tomatoes, cut into chunks (about 3 to 4 cups)
- ¾ cup good quality mayonnaise (I like Duke’s)
- 1 cup shredded sharp cheddar
- 1 cup shredded mozzarella
- Large handful of fresh basil, chopped or thinly sliced (about ¼ cup)
- Kosher salt and pepper, to taste
Instructions
- Preheat oven to 350°F (175°C).
- Blind bake the pie shell for 10 minutes, then set aside to cool slightly.
- Pat the tomato chunks dry with paper towels to remove excess moisture.
- Layer tomatoes in the pie shell and season with salt and pepper.
- Sprinkle chopped basil evenly over the tomatoes.
- In a bowl, mix the mayonnaise, cheddar, and mozzarella until combined.
- Spread the cheese mixture over the tomatoes and basil.
- Bake for 30–35 minutes or until the top is golden and bubbly.
- Allow to cool for 10–15 minutes before slicing and serving.
Notes
Perfect served warm or at room temperature. Use ripe but firm tomatoes for best results.
