- 6 bone-in, skin-on chicken thighs
- 1 cup long-grain white rice
- 1 can black beans, drained and rinsed
- 2 cups chicken broth
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
- 1/2 cup fresh cilantro, chopped
- Juice of 1 lime
Instructions
- Season chicken thighs with salt, pepper, cumin, and smoked paprika.
- Heat olive oil in a large pot or deep skillet over medium heat.
- Sear chicken thighs skin-side down until golden brown, then flip and cook briefly.
- Remove chicken and set aside.
- Add onion to the pot and cook until softened.
- Stir in garlic and cook for 30 seconds.
- Add rice and stir to coat with oil and aromatics.
- Pour in chicken broth and bring to a simmer.
- Stir in black beans.
- Place chicken thighs on top of the rice mixture.
- Cover and cook until rice is tender and chicken is fully cooked.
- Remove from heat and stir in cilantro and lime juice before serving.
Notes
For extra heat, add a pinch of chili flakes or diced jalapeño with the onions.
