Ingredients

  • 1 cup dried lentils (rinsed)
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (400g) diced tomatoes
  • 6 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 bay leaf
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrots, and celery. Cook until softened, about 5 minutes.
  3. Stir in cumin and smoked paprika, cooking for 1 minute to release flavors.
  4. Add lentils, diced tomatoes, vegetable broth, and bay leaf.
  5. Bring to a boil, then reduce heat and let simmer for 30-35 minutes, until lentils are tender.
  6. Remove bay leaf and season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley or cilantro.

Notes

This soup gets even better the next day as the flavors deepen. Serve with crusty bread for a complete meal.
