- 1 cup dried lentils (rinsed)
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (400g) diced tomatoes
- 6 cups vegetable broth
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 bay leaf
- 2 tbsp olive oil
- Salt and black pepper to taste
- Fresh parsley or cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrots, and celery. Cook until softened, about 5 minutes.
- Stir in cumin and smoked paprika, cooking for 1 minute to release flavors.
- Add lentils, diced tomatoes, vegetable broth, and bay leaf.
- Bring to a boil, then reduce heat and let simmer for 30-35 minutes, until lentils are tender.
- Remove bay leaf and season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley or cilantro.
Notes
This soup gets even better the next day as the flavors deepen. Serve with crusty bread for a complete meal.
