Description

A delicious and wholesome Paleo-friendly pumpkin monkey bread with warm spices, maple sweetness, and crunchy walnuts.

  • Prepare the Pan:
  • 1 tablespoon coconut oil (or ghee) to grease the bundt pan
  • 1/2 cup walnut pieces
  • For the Monkey Bread Dough:
  • 2 1/4 cups pumpkin puree
  • 2 teaspoons vanilla
  • 1/2 cup coconut oil, melted (or melted ghee)
  • 4 eggs
  • 1 cup coconut flour
  • 1 cup almond flour, sifted (or fine ground, not meal)
  • 1 cup cassava flour
  • 3 tablespoons arrowroot powder
  • 2 tablespoons ground psyllium husk
  • 1 teaspoon baking powder
  • 1/2 cup maple sugar
  • 2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • 1 cup walnut pieces (optional)
  • For the Coating:
  • 1/2 cup maple sugar
  • 2 teaspoons pumpkin pie spice
  • 2 teaspoons cinnamon
  • For Topping:
  • 1/3 cup maple syrup
  • 2 tablespoons palm shortening, broken into small pieces

Instructions

  1. Preheat oven to 350°F (175°C) and grease a bundt pan with coconut oil or ghee. Sprinkle 1/2 cup walnut pieces into the bottom of the pan.
  2. In a large bowl, combine pumpkin puree, vanilla, melted coconut oil (or ghee), and eggs. Mix until smooth.
  3. Add coconut flour, almond flour, cassava flour, arrowroot powder, ground psyllium husk, baking powder, maple sugar, pumpkin pie spice, and salt. Stir until a thick dough forms. Fold in 1 cup walnut pieces if using.
  4. In a small bowl, mix maple sugar, pumpkin pie spice, and cinnamon for the coating.
  5. Using your hands, form small balls of dough and roll them in the coating mixture. Arrange them in the bundt pan over the walnuts.
  6. Drizzle maple syrup evenly over the dough balls. Dot with small pieces of palm shortening.
  7. Bake for 40–45 minutes, or until the bread is set and golden brown. Cool in the pan for 10 minutes before inverting onto a serving plate.

Notes

This Paleo pumpkin monkey bread is best enjoyed warm. You can substitute pecans for walnuts if preferred.
