  • 4 chicken thighs (4 large pieces fill standard skillet)
  • 1 tsp kosher salt
  • ½ tsp freshly ground black pepper
  • ½ tsp granulated garlic or garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp herbs de Provence

Instructions

  1. Pat chicken thighs dry with paper towels and season both sides with salt, pepper, garlic powder, oregano, basil, and herbs de Provence.
  2. Heat oil in large skillet over medium-high heat until shimmering (about 2 minutes).
  3. Place chicken thighs skin-side down in skillet. Cook undisturbed for 8-10 minutes until golden brown and crispy.
  4. Flip thighs and cook for additional 8-12 minutes until internal temperature reaches 165°F (74°C).
  5. Transfer to plate and let rest 5 minutes before serving. Spoon pan drippings over top.

Notes
