Ingredients
Scale
- 1 tablespoon coconut oil or light flavored olive oil
- 4 chicken thighs (4 large pieces fill standard skillet)
- 1 tsp kosher salt
- ½ tsp freshly ground black pepper
- ½ tsp granulated garlic or garlic powder
- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp herbs de Provence
Instructions
- Pat chicken thighs dry with paper towels and season both sides with salt, pepper, garlic powder, oregano, basil, and herbs de Provence.
- Heat oil in large skillet over medium-high heat until shimmering (about 2 minutes).
- Place chicken thighs skin-side down in skillet. Cook undisturbed for 8-10 minutes until golden brown and crispy.
- Flip thighs and cook for additional 8-12 minutes until internal temperature reaches 165°F (74°C).
- Transfer to plate and let rest 5 minutes before serving. Spoon pan drippings over top.
Notes
Tips: For extra crispy skin, avoid moving chicken during first 8 minutes of cooking. Substitutions: Use regular olive oil if coconut oil isn’t available. Thyme or rosemary can replace herbs de Provence. Storage: Keep in airtight container 3-4 days. Reheat gently in skillet.
