  • 1 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, beat the egg, then add water, vegetable oil, and vanilla extract. Mix well.
  3. Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Do not overmix.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with oil or butter.
  5. Pour 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface and edges look set, then flip and cook until golden brown on the other side.
  7. Repeat with the remaining batter.
  8. Serve warm with your favorite toppings like syrup, fruit, or butter.

Notes

For fluffier pancakes, let the batter rest for 5 minutes before cooking. You can also substitute water with almond milk or oat milk for extra flavor.
