Instructions
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, beat the egg, then add water, vegetable oil, and vanilla extract. Mix well.
- Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Do not overmix.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with oil or butter.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface and edges look set, then flip and cook until golden brown on the other side.
- Repeat with the remaining batter.
- Serve warm with your favorite toppings like syrup, fruit, or butter.
Notes
For fluffier pancakes, let the batter rest for 5 minutes before cooking. You can also substitute water with almond milk or oat milk for extra flavor.
