Description
A rich and moist pound cake bursting with fresh peaches, layered with a spiced cobbler mix and topped with a sweet vanilla frosting.

- 2 large peaches
- 1/3 cup brown sugar
- 1 tbsp cinnamon
- 1/4 tsp nutmeg
- 2 tbsp rum or bourbon
- 1/4 cup butter, melted

- 5 eggs
- 3 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp salt
- 1 tbsp vanilla extract

- 1 cup powdered sugar
- 2 to 3 tbsp milk
- 1 tsp vanilla extract
- Mint leaves, optional for garnish
Instructions
- Preheat oven to 325°F (165°C). Grease a round baking pan with vegetable oil.
- In a bowl, mix 2 peaches (sliced), brown sugar, cinnamon, nutmeg, rum or bourbon, and melted butter. Set aside.
- In a separate bowl, cream the unsalted butter, cream cheese, and granulated sugar until fluffy.
- Add eggs one at a time, mixing well after each addition.
- Combine flour, baking powder, and salt in another bowl. Gradually add to the wet mixture.
- Stir in vanilla extract and milk until smooth.
- Fold in 2 chopped peaches.
- Pour half of the batter into the greased pan, layer with the peach cobbler mixture, then top with remaining batter.
- Bake for 1 hour 15 minutes, or until a toothpick comes out clean.
- Let cake cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
- Whisk powdered sugar, milk, and vanilla extract to make frosting. Drizzle over cooled cake.
- Garnish with mint leaves if desired. Serve and enjoy!
