  • 1/4 cup butter, melted
  • 2 large peaches
  • 1 cup unsalted butter
  • 1 cup cream cheese
  • 2 cups granulated sugar
  • 5 eggs
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tbsp vanilla extract
  • 1/3 cup milk
  • Vegetable oil for greasing the baking dish
  • 1 cup powdered sugar
  • 2 to 3 tbsp milk
  • 1 tsp vanilla extract
  • Mint leaves, optional for garnish

Instructions

  1. Preheat oven to 325°F (165°C). Grease a round baking pan with vegetable oil.
  2. In a bowl, mix 2 peaches (sliced), brown sugar, cinnamon, nutmeg, rum or bourbon, and melted butter. Set aside.
  3. In a separate bowl, cream the unsalted butter, cream cheese, and granulated sugar until fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Combine flour, baking powder, and salt in another bowl. Gradually add to the wet mixture.
  6. Stir in vanilla extract and milk until smooth.
  7. Fold in 2 chopped peaches.
  8. Pour half of the batter into the greased pan, layer with the peach cobbler mixture, then top with remaining batter.
  9. Bake for 1 hour 15 minutes, or until a toothpick comes out clean.
  10. Let cake cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
  11. Whisk powdered sugar, milk, and vanilla extract to make frosting. Drizzle over cooled cake.
  12. Garnish with mint leaves if desired. Serve and enjoy!
