Description
These Peach Crumble Cheesecake Bars combine a buttery graham cracker crust, rich and creamy cheesecake filling, sweet peach topping, and a golden oat crumble for the perfect summer treat.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 1/4 cup sugar
- 1 package cream cheese (8 oz), softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 2 eggs
- 1/2 cup sour cream
- 2 cups fresh or canned peaches, chopped
- 1/2 cup sugar
- 1 tbsp cornstarch
- 1 tsp lemon juice
- 1/2 cup oats
- 1/2 cup flour
- 1/4 cup sugar
- 1/4 cup cold butter
Instructions
- Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan.
- In a bowl, mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press into the bottom of the prepared pan to form the crust.
- In another bowl, beat cream cheese until smooth. Add 1/2 cup sugar, vanilla extract, eggs, and sour cream. Mix until well combined.
- Pour cheesecake mixture over the crust and smooth out the top.
- In a saucepan, combine chopped peaches, 1/2 cup sugar, cornstarch, and lemon juice. Cook over medium heat until thickened. Let cool slightly, then spread over cheesecake layer.
- In a separate bowl, combine oats, flour, 1/4 cup sugar, and cold butter. Mix until crumbly. Sprinkle over the peach layer.
- Bake for 45–50 minutes, or until the center is set and the topping is golden brown.
- Let cool completely, then chill in the refrigerator for at least 2 hours before slicing into bars.
Notes
Use fresh peaches for the best flavor, but canned peaches work well too. Make sure bars are fully chilled before cutting for clean slices.
