  • 6 ounces frozen peaches, finely chopped
  • 3/4 cup (180 milliliters) well-shaken buttermilk
  • 3 tablespoons peach preserves
  • 2 tablespoons vegetable oil, plus more for frying
  • Flaky sea salt, such as Maldon, for sprinkling
  • 1/2 cup (120 milliliters) maple syrup
  • 1/4 cup (60 milliliters) bourbon
  • 1/4 cup (55 grams) packed light brown sugar
  • One (3-inch) cinnamon stick or 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together flour, cornmeal, baking powder, and salt.
  2. In a separate bowl, whisk together the egg, buttermilk, peach preserves, and 2 tablespoons of oil.
  3. Stir wet ingredients into dry until just combined, then fold in the chopped peaches.
  4. Heat oil in a deep skillet over medium heat.
  5. Drop batter by spoonfuls into hot oil and fry until golden brown on both sides, about 2-3 minutes per side.
  6. Drain on paper towels and sprinkle with flaky sea salt.
  7. In a small saucepan, combine maple syrup, bourbon, brown sugar, and cinnamon stick.
  8. Bring to a simmer and cook until slightly thickened, about 5-7 minutes.
  9. Remove from heat, stir in vanilla extract, and let cool slightly.
  10. Serve fritters warm with the maple-bourbon sauce.

Notes

If using fresh peaches, peel and finely chop them before adding to the batter. Ensure the oil is properly heated before frying to avoid soggy fritters.
