- 3/4 cup (180 milliliters) well-shaken buttermilk
- 3 tablespoons peach preserves
- 2 tablespoons vegetable oil, plus more for frying
- Flaky sea salt, such as Maldon, for sprinkling
- 1/2 cup (120 milliliters) maple syrup
- 1/4 cup (60 milliliters) bourbon
- 1/4 cup (55 grams) packed light brown sugar
- One (3-inch) cinnamon stick or 1/2 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, whisk together flour, cornmeal, baking powder, and salt.
- In a separate bowl, whisk together the egg, buttermilk, peach preserves, and 2 tablespoons of oil.
- Stir wet ingredients into dry until just combined, then fold in the chopped peaches.
- Heat oil in a deep skillet over medium heat.
- Drop batter by spoonfuls into hot oil and fry until golden brown on both sides, about 2-3 minutes per side.
- Drain on paper towels and sprinkle with flaky sea salt.
- In a small saucepan, combine maple syrup, bourbon, brown sugar, and cinnamon stick.
- Bring to a simmer and cook until slightly thickened, about 5-7 minutes.
- Remove from heat, stir in vanilla extract, and let cool slightly.
- Serve fritters warm with the maple-bourbon sauce.
Notes
If using fresh peaches, peel and finely chop them before adding to the batter. Ensure the oil is properly heated before frying to avoid soggy fritters.
