Description

A vibrant, sweet and spicy Peach Mango Salsa perfect for summer snacking or as a topping for grilled meats and tacos.


Ingredients

Scale
  • 10 lbs tomatoes
  • 8 peaches
  • 3 mangos
  • 3 red bell peppers
  • 1 TBSP Chile Habanero Sauce
  • 3 onions
  • 1 cup distilled white vinegar
  • 1 TBSP dried cilantro
  • 2 cups sugar
  • 2 TBSP salt
  • 7 cloves garlic
  • 15 oz canned tomato sauce
  • 6 oz canned tomato paste

Instructions

  1. Peel and dice tomatoes, peaches, mangos, and red bell peppers.
  2. Finely chop onions and garlic.
  3. Combine all fruits, vegetables, and remaining ingredients in a large pot.
  4. Bring to a boil over medium heat, stirring frequently.
  5. Reduce heat and simmer for 30–45 minutes until thickened.
  6. Ladle hot salsa into sterilized jars, leaving 1/2 inch headspace.
  7. Seal and process in a boiling water bath for 15 minutes.

Notes

This salsa gets better after a day or two as the flavors meld. Adjust the heat level by adding more or less Chile Habanero Sauce.
