Description

Ingredients

  • 3 ripe peaches, pitted and diced
  • 1 red bell pepper, chopped
  • 1/2 red onion, chopped
  • 1 jalapeño pepper, seeded and chopped
  • 1/2 bunch cilantro, chopped
  • Juice and zest of 1 lime
  • 1 garlic clove, grated
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped walnuts or 1/3 cup toasted pepitas
  • Optional: 1/2 teaspoon chili powder or 1 1/2 teaspoons ground cumin

Instructions

  1. Dice the peaches, red bell pepper, and red onion finely.
  2. Seed and chop the jalapeño pepper.
  3. Chop the cilantro and grate the garlic.
  4. Combine all ingredients in a mixing bowl.
  5. Add lime juice and zest, salt, and black pepper.
  6. Stir in the walnuts or pepitas for crunch.
  7. Add optional spices if desired for extra depth.
  8. Mix well and refrigerate for at least 30 minutes before serving.

Notes

For extra sweetness, add a drizzle of honey. This salsa pairs wonderfully with grilled chicken or fish.
