- 3 ripe peaches, pitted and diced
- 1 red bell pepper, chopped
- 1/2 red onion, chopped
- 1 jalapeño pepper, seeded and chopped
- 1/2 bunch cilantro, chopped
- Juice and zest of 1 lime
- 1 garlic clove, grated
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped walnuts or 1/3 cup toasted pepitas
- Optional: 1/2 teaspoon chili powder or 1 1/2 teaspoons ground cumin
Instructions
- Dice the peaches, red bell pepper, and red onion finely.
- Seed and chop the jalapeño pepper.
- Chop the cilantro and grate the garlic.
- Combine all ingredients in a mixing bowl.
- Add lime juice and zest, salt, and black pepper.
- Stir in the walnuts or pepitas for crunch.
- Add optional spices if desired for extra depth.
- Mix well and refrigerate for at least 30 minutes before serving.
Notes
For extra sweetness, add a drizzle of honey. This salsa pairs wonderfully with grilled chicken or fish.
