- 1 tablespoon olive oil or unsalted butter
- 2 medium zucchini (about 1 pound total), cut crosswise into 1/2-inch thick rounds (about 3 cups)
- 1/2 teaspoon dried oregano
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 2 tablespoons finely grated Parmesan cheese (optional)
Instructions
- Heat olive oil or butter in a large skillet over medium-high heat.
- Add zucchini slices in a single layer and cook for 3-4 minutes without stirring until golden on one side.
- Flip zucchini, sprinkle with oregano, salt, and pepper, and cook for another 3-4 minutes until tender and browned.
- Remove from heat and optionally sprinkle with Parmesan cheese before serving.
Notes
Best served fresh. Avoid overcrowding the pan to ensure proper browning.
