Description

A classic Philadelphia treat — this tomato pie has a thick, airy crust and is topped with a rich tomato sauce and sharp Parmigiano-Reggiano.


Ingredients

  • 1 recipe Sheet Pan Pizza Dough
  • 1 recipe New York Style Pizza Sauce (about 2 cups)
  • 2 tablespoons extra-virgin olive oil, plus more for drizzling
  • Kosher salt
  • Freshly ground black pepper
  • 2 to 4 ounces Parmigiano-Reggiano cheese, finely grated (½ to 1 cup)

Instructions

  1. Prepare the Sheet Pan Pizza Dough and let it rise according to recipe instructions.
  2. Preheat oven to 500°F (260°C).
  3. Drizzle a sheet pan with olive oil and stretch the dough to fit.
  4. Allow the dough to rest and rise slightly on the pan, covered with plastic wrap, for 30 to 45 minutes.
  5. Spread the New York Style Pizza Sauce evenly over the dough, leaving a border around the edges.
  6. Season with salt and freshly ground black pepper.
  7. Bake for 13 to 15 minutes until crust is golden and crisp.
  8. Remove from oven and sprinkle evenly with Parmigiano-Reggiano.
  9. Drizzle with a bit more olive oil before slicing and serving.

Notes

Best served slightly warm or at room temperature. For authentic Philly-style, do not overload with cheese.
