Ingredients

  • 1 9 inch pie crust
  • 3 medium tomatoes, sliced
  • 1 1/2 cups of shredded sharp cheddar cheese
  • 1/2 cup of mayonnaise
  • 3 tablespoons of diced pimentos
  • 1 teaspoon of fresh chopped basil
  • 1 teaspoon of fresh chopped parsley
  • 1 teaspoon of oregano
  • 1/4 teaspoon of smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Place the pie crust in a pie dish and bake for 8-10 minutes until lightly golden.
  3. Layer the sliced tomatoes on a paper towel, sprinkle with salt, and let them sit for 10 minutes to draw out moisture. Pat dry.
  4. In a bowl, mix cheddar cheese, mayonnaise, pimentos, basil, parsley, oregano, paprika, salt, and pepper.
  5. Layer tomatoes in the pre-baked crust.
  6. Spoon the cheese mixture over the tomatoes, spreading evenly.
  7. Bake for 30–35 minutes, until bubbly and golden on top.
  8. Let cool for 10 minutes before slicing and serving.
