Description

A refreshing and colorful salad with crisp greens, juicy pomegranate seeds, crunchy pecans, tangy goat cheese, and a homemade apple cider vinaigrette.

Ingredients

Scale
  • 6 cups mixed greens
  • 1 cup pomegranate seeds
  • 1/2 cup crumbled goat cheese
  • 1/2 cup pecans, toasted
  • 1 apple, thinly sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • Salt and black pepper, to taste

Instructions

  1. In a large bowl, combine mixed greens, pomegranate seeds, apple slices, red onion, goat cheese, and toasted pecans.
  2. In a small bowl or jar, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until emulsified.
  3. Pour the vinaigrette over the salad just before serving.
  4. Toss gently to coat all ingredients evenly.
  5. Serve immediately and enjoy fresh.

Notes

You can substitute walnuts or almonds for the pecans. For a vegan version, use maple syrup instead of honey and omit the goat cheese or use a plant-based alternative.
