Description

These soft and fluffy pumpkin cinnamon rolls are packed with warm spices and topped with a creamy maple icing — the perfect fall breakfast treat.


Ingredients

  • 1/3 cup (80ml) whole milk
  • 2 Tablespoons (28g) unsalted butter
  • 1/2 cup (115g) canned pumpkin (not pumpkin pie filling)
  • 1/4 cup (50g) granulated sugar
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 large egg
  • 2 and 1/4 teaspoons (7g) instant or active dry yeast
  • 2 and 2/3 cups (335g) all-purpose flour, plus more as needed
  • 6 Tablespoons (85g) unsalted butter, softened
  • 1/2 cup (100g) packed light or dark brown sugar
  • 1 Tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 4 ounces (113g) full-fat brick cream cheese, softened
  • 3 Tablespoons (45ml) pure maple syrup
  • 1 Tablespoons (15ml) whole milk
  • 2/3 cup (80g) confectioners’ sugar, sifted
  • Optional: 1/8 teaspoon ground cinnamon

Instructions

  1. Warm the milk and butter together until the butter is melted. Let cool until warm to the touch.
  2. In a large bowl, whisk the milk mixture with pumpkin, sugar, nutmeg, salt, and egg.
  3. Whisk in the yeast, then add flour gradually until a soft dough forms.
  4. Knead for 6–8 minutes until smooth and elastic. Let rise in a warm place until doubled in size, about 1 hour.
  5. Roll the dough out into a large rectangle on a floured surface.
  6. Spread softened butter over the dough. Mix brown sugar and spices, then sprinkle evenly over the buttered dough.
  7. Roll the dough tightly into a log and cut into 12 even rolls.
  8. Place rolls in a greased baking dish, cover, and let rise again for 30–40 minutes.
  9. Bake at 350°F (177°C) for 23–27 minutes, until golden brown.
  10. Whisk together cream cheese, maple syrup, milk, confectioners’ sugar, and optional cinnamon until smooth.
  11. Spread icing over warm rolls and serve.

Notes

Make sure the pumpkin is pure puree, not pie filling. You can make the dough ahead of time and refrigerate overnight before the second rise.
