Description

Delicate pumpkin-flavored macarons filled with spiced buttercream and rich pumpkin pie filling, perfect for autumn treats.


Ingredients

  • 110 g aged egg whites, room temperature
  • 1/4 tsp cream of tartar – optional
  • 110 g granulated sugar (1/2 cup + 2 tsp)
  • orange gel food coloring – optional
  • 140 g superfine almond flour, blanched (1 1/2 cups)
  • 125 g powdered sugar (1 cup)
  • Spiced Buttercream Frosting:
  • 113 g unsalted butter, room temperature (1/2 cup)
  • 4 g vanilla extract or vanilla bean paste (1 tsp)
  • 2 g fine salt (1/4 tsp)
  • 3 g ground cinnamon (1 tsp)
  • 1 g ground nutmeg (1/4 tsp)
  • 1 g ground cloves (1/4 tsp)
  • 250 g powdered sugar (2 cups)
  • 15 g heavy whipping cream, room temperature (1 Tbsp)
  • Pumpkin Pie Filling:
  • 125 g pumpkin pie filling (1/2 cup)
  • 50 g packed light brown sugar (1/4 cup)
  • 6 g ground cinnamon (2 tsp)

Instructions

  1. Preheat the oven to 300°F (150°C) and prepare macaron baking mats or parchment-lined trays.
  2. Whip aged egg whites until foamy, add cream of tartar if using, then slowly add granulated sugar and whip to stiff peaks. Add food coloring if desired.
  3. Sift almond flour and powdered sugar together, then fold gently into the meringue using the macaronage technique until the batter flows like lava.
  4. Pipe small circles onto trays, tap trays to release air bubbles, and let sit until a skin forms (20-40 mins).
  5. Bake for 15–18 minutes, cool completely before removing from trays.
  6. To make buttercream: Beat butter until fluffy, add vanilla, salt, cinnamon, nutmeg, cloves, and powdered sugar. Add cream and beat until smooth.
  7. To make filling: Mix pumpkin pie filling, brown sugar, and cinnamon until smooth.
  8. Pair macaron shells, pipe buttercream around the edge, fill center with pumpkin filling, sandwich, and let mature 24–48 hours for best texture.

Notes

For best results, age egg whites and let assembled macarons mature before serving to enhance flavor and texture.
