Description

Tender, spiced pumpkin scones topped with a sweet and creamy vanilla glaze – the perfect fall treat.

Ingredients

Scale
  • 4 cups all-purpose flour, plus extra for dusting
  • ½ cup granulated sugar
  • 4 tablespoons baking powder
  • 2 teaspoons kosher salt
  • 2 to teaspoons pumpkin pie spice, divided
  • 1¼ cups cold unsalted butter, cubed
  • 1¾ cups pumpkin puree
  • 7 tablespoons cold heavy cream, divided
  • 6 tablespoons cold heavy cream, divided
  • 1 large egg, lightly beaten
  • 2 teaspoons vanilla extract, divided
  • 2 cups confectioners’ sugar

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and 2 teaspoons pumpkin pie spice.
  3. Cut in cold butter with a pastry cutter or your hands until mixture resembles coarse crumbs.
  4. In a separate bowl, mix pumpkin puree, 6 tablespoons heavy cream, egg, and 1 teaspoon vanilla extract until smooth.
  5. Add wet ingredients to dry mixture and stir until just combined; do not overmix.
  6. Turn dough onto a floured surface and gently knead a few times. Pat into a circle about 1-inch thick and cut into wedges.
  7. Place scones on prepared baking sheet. Brush tops with remaining 1 tablespoon heavy cream and sprinkle with remaining pumpkin pie spice.
  8. Bake for 15-18 minutes, or until golden brown. Let cool slightly.
  9. For glaze: In a bowl, whisk confectioners’ sugar, remaining 1 teaspoon vanilla extract, and 6 tablespoons heavy cream until smooth. Drizzle over cooled scones.

Notes

For extra flavor, try adding a handful of chopped pecans or a sprinkle of cinnamon sugar before baking.
