- 4 cups all-purpose flour, plus extra for dusting
- ½ cup granulated sugar
- 4 tablespoons baking powder
- 2 teaspoons kosher salt
- 2 to 2½ teaspoons pumpkin pie spice, divided
- 1¼ cups cold unsalted butter, cubed
- 1¾ cups pumpkin puree
- 7 tablespoons cold heavy cream, divided
- 6 tablespoons cold heavy cream, divided
- 1 large egg, lightly beaten
- 2 teaspoons vanilla extract, divided
- 2 cups confectioners’ sugar
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
- In a large bowl, whisk together flour, sugar, baking powder, salt, and 2 teaspoons pumpkin pie spice.
- Cut in cold butter with a pastry cutter or your hands until mixture resembles coarse crumbs.
- In a separate bowl, mix pumpkin puree, 6 tablespoons heavy cream, egg, and 1 teaspoon vanilla extract until smooth.
- Add wet ingredients to dry mixture and stir until just combined; do not overmix.
- Turn dough onto a floured surface and gently knead a few times. Pat into a circle about 1-inch thick and cut into wedges.
- Place scones on prepared baking sheet. Brush tops with remaining 1 tablespoon heavy cream and sprinkle with remaining pumpkin pie spice.
- Bake for 15-18 minutes, or until golden brown. Let cool slightly.
- For glaze: In a bowl, whisk confectioners’ sugar, remaining 1 teaspoon vanilla extract, and 6 tablespoons heavy cream until smooth. Drizzle over cooled scones.
Notes
For extra flavor, try adding a handful of chopped pecans or a sprinkle of cinnamon sugar before baking.
