Description
A warm, savory and slightly sweet pumpkin stuffing, perfect for Thanksgiving dinner.

- 1 loaf of day-old bread, cubed
- 2 cups pumpkin puree
- 1 medium onion, diced
- 3 celery stalks, diced
- 2 cloves garlic, minced
- 1/4 cup butter
- 2 cups vegetable broth
- 1 tsp dried sage
- 1 tsp dried thyme
- 1/2 tsp ground nutmeg
- Salt and pepper to taste
- 1/2 cup chopped fresh parsley
Instructions
- Preheat oven to 180°C (350°F).
- Spread bread cubes on a baking sheet and toast for 10 minutes until lightly golden.
- In a large skillet, melt butter and sauté onion, celery, and garlic until softened.
- Add pumpkin puree, vegetable broth, sage, thyme, nutmeg, salt, and pepper. Stir well to combine.
- Place toasted bread cubes in a large bowl and pour the pumpkin mixture over them.
- Mix gently until all bread is coated.
- Transfer stuffing to a greased baking dish.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake an additional 15 minutes until top is golden and slightly crisp.
- Garnish with fresh parsley before serving.
Notes
This stuffing can be prepared a day in advance and baked just before serving. Adjust broth for a moister or drier stuffing depending on preference.
