Description

A warm, savory and slightly sweet pumpkin stuffing, perfect for Thanksgiving dinner.


Ingredients

  • 1 loaf of day-old bread, cubed
  • 2 cups pumpkin puree
  • 1 medium onion, diced
  • 3 celery stalks, diced
  • 2 cloves garlic, minced
  • 1/4 cup butter
  • 2 cups vegetable broth
  • 1 tsp dried sage
  • 1 tsp dried thyme
  • 1/2 tsp ground nutmeg
  • Salt and pepper to taste
  • 1/2 cup chopped fresh parsley

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Spread bread cubes on a baking sheet and toast for 10 minutes until lightly golden.
  3. In a large skillet, melt butter and sauté onion, celery, and garlic until softened.
  4. Add pumpkin puree, vegetable broth, sage, thyme, nutmeg, salt, and pepper. Stir well to combine.
  5. Place toasted bread cubes in a large bowl and pour the pumpkin mixture over them.
  6. Mix gently until all bread is coated.
  7. Transfer stuffing to a greased baking dish.
  8. Cover with foil and bake for 30 minutes.
  9. Remove foil and bake an additional 15 minutes until top is golden and slightly crisp.
  10. Garnish with fresh parsley before serving.

Notes

This stuffing can be prepared a day in advance and baked just before serving. Adjust broth for a moister or drier stuffing depending on preference.
