Description

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 1 lb ground turkey
  • 1 can (15 oz) pumpkin puree
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cinnamon
  • Salt and black pepper to taste
  • Optional toppings: shredded cheese, sour cream, fresh cilantro, sliced jalapeños

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, bell pepper, and garlic, and sauté until softened.
  3. Stir in the ground turkey and cook until browned.
  4. Add pumpkin puree, black beans, kidney beans, diced tomatoes, and chicken broth.
  5. Season with chili powder, cumin, smoked paprika, cinnamon, salt, and black pepper.
  6. Bring to a boil, then reduce heat and let simmer for 30–40 minutes, stirring occasionally.
  7. Taste and adjust seasoning as needed.
  8. Serve hot with desired toppings.

Notes
