- 1 tablespoon olive oil
- 1 medium onion, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 1 lb ground turkey
- 1 can (15 oz) pumpkin puree
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken broth
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon cinnamon
- Salt and black pepper to taste
- Optional toppings: shredded cheese, sour cream, fresh cilantro, sliced jalapeños
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, bell pepper, and garlic, and sauté until softened.
- Stir in the ground turkey and cook until browned.
- Add pumpkin puree, black beans, kidney beans, diced tomatoes, and chicken broth.
- Season with chili powder, cumin, smoked paprika, cinnamon, salt, and black pepper.
- Bring to a boil, then reduce heat and let simmer for 30–40 minutes, stirring occasionally.
- Taste and adjust seasoning as needed.
- Serve hot with desired toppings.
