Ingredients

- 6 dried red chilies
- 3 cloves garlic
- 1 small onion, chopped
- 2 tablespoons vegetable oil
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- Salt, to taste
- 1/2 cup water
Instructions
- Soak dried red chilies in hot water for 15 minutes.
- Drain chilies and remove seeds if desired.
- Heat oil in a saucepan over medium heat.
- Add garlic and onion and sauté until soft.
- Add soaked chilies and cook for 2 minutes.
- Add water, soy sauce, vinegar, and sugar.
- Simmer for 10 minutes.
- Blend until smooth.
- Season with salt to taste.
Notes
Adjust heat level by keeping or removing chili seeds. Sauce can be stored refrigerated for up to one week.
