  • 1 package cream cheese (8 ounces), at room temperature
  • 1/2 cup butter or margarine, at room temperature
  • 1 pound confectioner’s sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F. Line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, beat sugar and oil until combined.
  4. Beat in eggs one at a time, followed by vinegar and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk, beginning and ending with dry ingredients.
  6. Divide batter evenly among muffin cups.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow cupcakes to cool completely before frosting.
  9. For the frosting, beat cream cheese and butter until smooth.
  10. Gradually add confectioner’s sugar, beating until smooth and creamy.
  11. Beat in vanilla extract.
  12. Frost cooled cupcakes.
