Instructions
- Preheat oven to 350°F. Line a 12-cup muffin tin with cupcake liners.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In a large bowl, beat sugar and oil until combined.
- Beat in eggs one at a time, followed by vinegar and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk, beginning and ending with dry ingredients.
- Divide batter evenly among muffin cups.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Allow cupcakes to cool completely before frosting.
- For the frosting, beat cream cheese and butter until smooth.
- Gradually add confectioner’s sugar, beating until smooth and creamy.
- Beat in vanilla extract.
- Frost cooled cupcakes.
