A savory and rich quiche made with tender salmon and vibrant Swiss chard, perfect for brunch or a light dinner.

- 1 sheet of pie crust
- 200g fresh salmon, cooked and flaked
- 150g Swiss chard, chopped
- 1 small onion, diced
- 3 eggs
- 200ml heavy cream
- 100g grated cheese (Gruyère or cheddar)
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 180°C (350°F).
- Roll out and place the pie crust in a tart pan, prick the base with a fork, and pre-bake for 10 minutes.
- Heat olive oil in a pan and sauté the onion until translucent.
- Add Swiss chard and cook until wilted. Set aside to cool.
- In a bowl, beat the eggs and mix in the cream, salt, and pepper.
- Spread the salmon and sautéed chard over the pre-baked crust.
- Pour the egg and cream mixture on top and sprinkle with grated cheese.
- Bake for 30–35 minutes until the quiche is golden and set.
- Let it rest 5 minutes before serving.
Notes
You can use smoked salmon for extra flavor. Serve warm or at room temperature with a side salad.
