- 12 ounces wild‑caught salmon baked and chopped (may substitute canned)
- ½ large lemon juiced (~2 tablespoons)
- ½ teaspoon lemon zest
- 1 small shallot minced (may substitute 2 cloves garlic minced)
- 2 green onions sliced
- 1 tablespoon fresh dill chopped (may substitute 1 teaspoon dried dill)
- 2 teaspoons Dijon mustard
- ¼ teaspoon fine sea salt
- ¼ teaspoon black pepper
- 2 eggs
- ¼ cup almond flour
- 1 tablespoon coconut oil or ghee or clarified butter
- ½ avocado halved and pit removed (for sauce)
- ¼ cup extra virgin olive oil (for sauce)
- ½ lemon juiced (for sauce)
- 1 teaspoon Dijon mustard (for sauce)
- 1 tablespoon fresh dill (for sauce) (may substitute 1 teaspoon dried dill)
- 2 garlic cloves minced (for sauce)
- ¼ teaspoon fine salt (for sauce)
- 1/8 teaspoon black pepper (for sauce)
Instructions
- In a large bowl combine salmon, lemon juice, lemon zest, shallot, green onions, dill, Dijon mustard, salt and pepper. Mix gently.
- Add eggs, almond flour and coconut oil and stir until just combined.
- Form the mixture into four equal patties.
- Heat a skillet over medium heat, add a little oil and cook the patties 3‑4 minutes per side until golden and cooked through.
- Meanwhile blend avocado, olive oil, lemon juice, Dijon mustard, fresh dill, garlic, salt and pepper until smooth.
- Serve each patty topped with avocado garlic sauce and optional garnish.
Notes
Tip: For extra crispiness pan‑sear the patties after baking. Store leftovers in an airtight container for up to 3 days. Freeze uncooked patties for up to 2 months.
