Description

Crispy on the outside, tender on the inside — these salmon fritters with sweet potato are perfect for brunch, lunch, or a light dinner.


Ingredients

  • 200g cooked salmon, flaked
  • 1 medium sweet potato, grated
  • 2 spring onions, finely chopped
  • 1 garlic clove, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 egg
  • 3 tablespoons flour
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for frying)

Instructions

  1. In a large bowl, mix the flaked salmon, grated sweet potato, spring onions, garlic, and parsley.
  2. Add the egg, flour, salt, and pepper. Mix well until the mixture holds together.
  3. Heat olive oil in a non-stick frying pan over medium heat.
  4. Form the mixture into small patties and place in the pan.
  5. Cook for 3–4 minutes on each side until golden brown and cooked through.
  6. Drain on paper towel and serve warm with a side salad or dipping sauce.

Notes

You can use canned salmon if you don’t have cooked salmon on hand. Add a squeeze of lemon for brightness.
