Description
Crispy on the outside, tender on the inside — these salmon fritters with sweet potato are perfect for brunch, lunch, or a light dinner.
Ingredients

- 200g cooked salmon, flaked
- 1 medium sweet potato, grated
- 2 spring onions, finely chopped
- 1 garlic clove, minced
- 2 tablespoons fresh parsley, chopped
- 1 egg
- 3 tablespoons flour
- Salt and pepper to taste
- 2 tablespoons olive oil (for frying)
Instructions
- In a large bowl, mix the flaked salmon, grated sweet potato, spring onions, garlic, and parsley.
- Add the egg, flour, salt, and pepper. Mix well until the mixture holds together.
- Heat olive oil in a non-stick frying pan over medium heat.
- Form the mixture into small patties and place in the pan.
- Cook for 3–4 minutes on each side until golden brown and cooked through.
- Drain on paper towel and serve warm with a side salad or dipping sauce.
Notes
You can use canned salmon if you don’t have cooked salmon on hand. Add a squeeze of lemon for brightness.
