A creamy and savory salmon quiche, baked with tender salmon chunks, cheese, and herbs in a flaky crust.

- 1 ready-made pie crust
- 200g cooked salmon (flaked)
- 4 large eggs
- 200ml heavy cream
- 100ml milk
- 100g grated cheese (Gruyère or cheddar)
- 1 small onion (finely chopped)
- 2 tbsp fresh dill or parsley (chopped)
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 180°C (350°F).
- Place the pie crust in a tart pan and prick the base with a fork.
- In a skillet, heat olive oil and sauté the chopped onion until soft.
- In a bowl, whisk together eggs, cream, and milk. Season with salt and pepper.
- Add flaked salmon, sautéed onion, grated cheese, and herbs into the egg mixture.
- Pour the mixture into the prepared crust.
- Bake in the oven for 35-40 minutes until golden and set.
- Allow to cool slightly before slicing and serving.
Notes
You can substitute salmon with smoked salmon for a richer flavor. Serve with a fresh green salad.
