Description
A healthy and delicious one-pan salmon dinner paired with crispy, caramelized shaved Brussels sprouts—perfect for a quick and nutritious weeknight meal.
Ingredients

- 4 salmon fillets (about 6 oz each)
- 1 lb Brussels sprouts, trimmed and thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 lemon, sliced
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Spread the shaved Brussels sprouts evenly on the baking sheet.
- Drizzle with 1 tablespoon of olive oil, sprinkle with salt, pepper, and half of the garlic powder and paprika. Toss to coat.
- Place the salmon fillets skin-side down on top of the Brussels sprouts.
- Drizzle the remaining olive oil over the salmon and season with salt, pepper, garlic powder, and paprika.
- Top each salmon fillet with a lemon slice.
- Roast in the oven for 15–18 minutes, until the salmon is cooked through and the Brussels sprouts are golden and crispy.
- Garnish with chopped fresh parsley if desired, and serve immediately.
Notes
For even crispier Brussels sprouts, spread them out well on the pan and avoid overcrowding. This dish pairs beautifully with quinoa or roasted sweet potatoes.
