Description

These Salmon Sweet Potato Patties are flavorful, healthy, and easy to make — perfect for a light lunch or dinner.


Ingredients

  • 1 medium sweet potato, peeled and cubed
  • 1 can (14 oz) salmon, drained and flaked
  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 green onions, chopped
  • 1 garlic clove, minced
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Boil the sweet potato cubes in a pot of water until tender, about 10 minutes. Drain and mash.
  2. In a bowl, combine mashed sweet potato, salmon, breadcrumbs, egg, green onions, garlic, smoked paprika, salt, and pepper. Mix until well combined.
  3. Form the mixture into patties.
  4. Heat olive oil in a skillet over medium heat.
  5. Cook the patties for 3-4 minutes on each side or until golden brown and heated through.
  6. Serve warm with a side salad or dipping sauce of your choice.

Notes

You can use leftover cooked salmon instead of canned. For extra crispiness, coat patties lightly with breadcrumbs before frying.
