These Salmon Sweet Potato Patties are flavorful, healthy, and easy to make — perfect for a light lunch or dinner.
Ingredients

- 1 medium sweet potato, peeled and cubed
- 1 can (14 oz) salmon, drained and flaked
- 1/4 cup breadcrumbs
- 1 egg
- 2 green onions, chopped
- 1 garlic clove, minced
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Boil the sweet potato cubes in a pot of water until tender, about 10 minutes. Drain and mash.
- In a bowl, combine mashed sweet potato, salmon, breadcrumbs, egg, green onions, garlic, smoked paprika, salt, and pepper. Mix until well combined.
- Form the mixture into patties.
- Heat olive oil in a skillet over medium heat.
- Cook the patties for 3-4 minutes on each side or until golden brown and heated through.
- Serve warm with a side salad or dipping sauce of your choice.
Notes
You can use leftover cooked salmon instead of canned. For extra crispiness, coat patties lightly with breadcrumbs before frying.
