Description

A light and flavorful salmon dish topped with a fresh tomato basil relish, perfect for a healthy dinner.


Ingredients

  • 4 salmon fillets
  • 2 cups cherry tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • Lemon wedges, for serving

Instructions

  1. Preheat oven to 200Β°C (400Β°F).
  2. Season salmon fillets with salt and pepper, and drizzle with olive oil.
  3. Place salmon on a baking sheet lined with parchment paper and bake for 12-15 minutes until cooked through.
  4. In a bowl, combine diced cherry tomatoes, chopped basil, minced garlic, olive oil, and balsamic vinegar. Season with salt and pepper.
  5. Once salmon is done, top with tomato basil relish.
  6. Serve warm with lemon wedges.

Notes

For extra flavor, grill the salmon instead of baking. Use ripe, sweet tomatoes for the best relish.
