- 4 salmon fillets
- 2 cups cherry tomatoes, diced
- 1/4 cup fresh basil, chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 garlic clove, minced
- Salt and pepper to taste
- Lemon wedges, for serving
Instructions
- Preheat oven to 200Β°C (400Β°F).
- Season salmon fillets with salt and pepper, and drizzle with olive oil.
- Place salmon on a baking sheet lined with parchment paper and bake for 12-15 minutes until cooked through.
- In a bowl, combine diced cherry tomatoes, chopped basil, minced garlic, olive oil, and balsamic vinegar. Season with salt and pepper.
- Once salmon is done, top with tomato basil relish.
- Serve warm with lemon wedges.
Notes
For extra flavor, grill the salmon instead of baking. Use ripe, sweet tomatoes for the best relish.
