Description

A rich, savory pie layered with juicy tomatoes, crispy bacon, fresh basil, and creamy cheese—perfect for a comforting brunch or dinner.


Ingredients

  • 67 medium unpeeled tomatoes (about 20 slices)
  • Pinch of salt
  • 1 9-inch deep-dish pie crust, homemade or ready-made
  • 1 cup shredded mozzarella cheese, divided
  • ¼ cup chopped fresh basil leaves
  • ½ cup chopped green onions
  • 1 cup diced pre-cooked bacon
  • 23 garlic cloves, minced
  • ½ tsp. ground black pepper
  • ½ cup mayonnaise
  • 1 cup shredded Parmesan cheese
  • Shredded mozzarella cheese (garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice tomatoes and sprinkle with salt. Let them drain on paper towels for 10 minutes to reduce moisture.
  3. Place pie crust in a 9-inch deep-dish pie plate and bake for 10 minutes. Let cool slightly.
  4. Layer half of the mozzarella cheese at the bottom of the crust.
  5. Add a layer of tomato slices, basil, green onions, bacon, and garlic.
  6. Sprinkle with black pepper and repeat the layering with remaining ingredients.
  7. In a bowl, mix mayonnaise and Parmesan cheese. Spread over the top of the pie.
  8. Sprinkle remaining mozzarella cheese on top for garnish.
  9. Bake uncovered for 30-35 minutes until bubbly and golden brown.
  10. Let rest for 10 minutes before slicing and serving.

Notes

To avoid a soggy crust, be sure to drain the tomatoes well before assembling the pie.
