These Scrumptious Salmon Cakes are crispy on the outside, tender on the inside, and bursting with flavor. A quick and delicious way to enjoy salmon for lunch or dinner.

- 2 cans (14.75 oz each) pink salmon, drained and flaked
- 1/3 cup finely chopped onion
- 1/4 cup finely chopped red bell pepper
- 1/2 cup breadcrumbs
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 2 large eggs
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 2 tablespoons chopped fresh parsley
- Vegetable oil, for frying
Instructions
- In a large bowl, combine salmon, onion, bell pepper, breadcrumbs, mayonnaise, mustard, eggs, lemon juice, garlic powder, salt, pepper, and parsley.
- Mix until well combined, then shape into 8–10 patties.
- Heat vegetable oil in a skillet over medium heat.
- Fry the salmon cakes in batches for 3–4 minutes per side or until golden brown and crispy.
- Drain on paper towels and serve warm with tartar sauce, lemon wedges, or a side salad.
Notes
For extra crispiness, chill the formed patties for 15–30 minutes before frying. You can also bake them at 400°F (200°C) for 20–25 minutes if preferred.
