Description

These Scrumptious Salmon Cakes are crispy on the outside, tender on the inside, and bursting with flavor. A quick and delicious way to enjoy salmon for lunch or dinner.


Ingredients

  • 2 cans (14.75 oz each) pink salmon, drained and flaked
  • 1/3 cup finely chopped onion
  • 1/4 cup finely chopped red bell pepper
  • 1/2 cup breadcrumbs
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 large eggs
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 tablespoons chopped fresh parsley
  • Vegetable oil, for frying

Instructions

  1. In a large bowl, combine salmon, onion, bell pepper, breadcrumbs, mayonnaise, mustard, eggs, lemon juice, garlic powder, salt, pepper, and parsley.
  2. Mix until well combined, then shape into 8–10 patties.
  3. Heat vegetable oil in a skillet over medium heat.
  4. Fry the salmon cakes in batches for 3–4 minutes per side or until golden brown and crispy.
  5. Drain on paper towels and serve warm with tartar sauce, lemon wedges, or a side salad.

Notes

For extra crispiness, chill the formed patties for 15–30 minutes before frying. You can also bake them at 400°F (200°C) for 20–25 minutes if preferred.
