Ingredients

  • 1 lb Brussels sprouts, trimmed and shaved thin
  • 1/2 cup sliced almonds, toasted
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup dried cranberries
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a large bowl, add the shaved Brussels sprouts.
  2. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper to make the dressing.
  3. Pour the dressing over the Brussels sprouts and toss well.
  4. Add almonds, Parmesan, and cranberries, then gently mix to combine.
  5. Serve fresh, chilled, or at room temperature.

Notes

For best results, shave the Brussels sprouts using a mandoline for thin and even slices. This salad tastes even better after chilling for 30 minutes to let flavors meld.
