- 1/2 cup sliced almonds, toasted
- 1/3 cup grated Parmesan cheese
- 1/4 cup dried cranberries
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tbsp Dijon mustard
- 1 tbsp honey
- Salt and freshly ground black pepper, to taste
Instructions
- In a large bowl, add the shaved Brussels sprouts.
- In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper to make the dressing.
- Pour the dressing over the Brussels sprouts and toss well.
- Add almonds, Parmesan, and cranberries, then gently mix to combine.
- Serve fresh, chilled, or at room temperature.
Notes
For best results, shave the Brussels sprouts using a mandoline for thin and even slices. This salad tastes even better after chilling for 30 minutes to let flavors meld.
