Description

Ingredients

  • 1.5 lbs chicken tenders
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • Zest of 1 lemon
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1 tablespoon Dijon mustard
  • Cooking spray or olive oil
  • Lemon wedges, for serving

Instructions

  1. Preheat oven to 425°F (220°C). Line a sheet pan with parchment paper and lightly spray with cooking spray or olive oil.
  2. In a shallow bowl, combine panko, Parmesan, lemon zest, garlic powder, oregano, salt, and pepper.
  3. In another bowl, whisk together eggs and Dijon mustard.
  4. Dip each chicken tender in the egg mixture, then coat in the breadcrumb mixture, pressing to adhere.
  5. Place coated chicken tenders on the prepared sheet pan.
  6. Lightly spray the tops with cooking spray or drizzle with a little olive oil.
  7. Bake for 20-22 minutes, flipping halfway through, until golden and cooked through.
  8. Serve with lemon wedges on the side.

Notes

For extra crispiness, broil the chicken tenders for 1-2 minutes at the end of baking. Serve with a side of roasted veggies or a fresh salad.
