- 1 lb raw shrimp, peeled and deveined
- 1 onion, finely chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 14 oz crushed tomatoes
- 2 tablespoons tomato paste
- 1 cup vegetable or chicken broth
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt
- Black pepper
- Fresh parsley, chopped
Instructions
- Finely chop the onion, bell pepper, and celery.
- Mince the garlic.
- Heat the olive oil in a large skillet or sauté pan.
- Sauté the onion, bell pepper, and celery until softened.
- Add the garlic and cook for 1 minute.
- Stir in the crushed tomatoes and tomato paste.
- Pour in the broth and mix well.
- Add paprika, cayenne pepper, oregano, and the bay leaf.
- Season with salt and black pepper.
- Simmer over low heat for 20 minutes.
- Add the shrimp and cook for 4–5 minutes until pink and cooked through.
- Remove the bay leaf.
- Garnish with fresh parsley before serving.
Notes
Traditionally served over white rice to soak up the flavorful Creole sauce.
