Instructions
- In a large salad bowl, combine mixed greens, sliced apples, toasted pecans, feta (or goat cheese), and dried cranberries.
- In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper until emulsified.
- Drizzle the dressing over the salad just before serving.
- Toss gently to coat and serve immediately.
Notes
For best flavor, use crisp, slightly tart apples like Honeycrisp or Pink Lady. You can also substitute walnuts for pecans.
