Description

A deliciously easy Christmas cake made with just three ingredients—perfectly rich, fruity, and festive without the fuss.


Ingredients

Scale
  • 1 kg mixed dried fruit
  • 600 ml chocolate milk
  • 2 cups self-raising flour

Instructions

  1. Preheat oven to 160°C (320°F) and line a cake tin with baking paper.
  2. In a large bowl, combine the dried fruit and chocolate milk. Cover and refrigerate overnight or for at least 8 hours.
  3. After soaking, stir in the self-raising flour until well combined.
  4. Pour the mixture into the prepared tin and smooth the top.
  5. Bake for 2 to 2.5 hours or until a skewer inserted in the middle comes out clean.
  6. Allow to cool completely in the tin before removing and slicing.

Notes

Store in an airtight container. You can also add spices or a splash of brandy for extra flavor.
