Ingredients

- 2 cups cooked salmon, flaked
- 3 medium potatoes, diced
- 1/2 cup onion, chopped
- 1/2 cup bell pepper, diced
- 2 tbsp olive oil
- 1 clove garlic, minced
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, chopped
- Optional: fried eggs for serving
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced potatoes and cook for 8-10 minutes until golden and crisp, stirring occasionally.
- Add onion, bell pepper, and garlic, and sauté for 3-4 minutes until softened.
- Season with paprika, salt, and black pepper.
- Gently fold in flaked salmon and cook for 2-3 minutes until heated through.
- Sprinkle with fresh parsley and serve hot, topped with fried eggs if desired.
Notes
For extra crispiness, parboil the potatoes before pan-frying. Smoked salmon can be used for a richer flavor.
