Description

Ingredients

  • 2 cups cooked salmon, flaked
  • 3 medium potatoes, diced
  • 1/2 cup onion, chopped
  • 1/2 cup bell pepper, diced
  • 2 tbsp olive oil
  • 1 clove garlic, minced
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • Optional: fried eggs for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced potatoes and cook for 8-10 minutes until golden and crisp, stirring occasionally.
  3. Add onion, bell pepper, and garlic, and sauté for 3-4 minutes until softened.
  4. Season with paprika, salt, and black pepper.
  5. Gently fold in flaked salmon and cook for 2-3 minutes until heated through.
  6. Sprinkle with fresh parsley and serve hot, topped with fried eggs if desired.

Notes

For extra crispiness, parboil the potatoes before pan-frying. Smoked salmon can be used for a richer flavor.
