- 1 Tbsp. Coffee-mate Sugar Free French Vanilla powdered creamer
- ¼ tsp. peppermint extract
- 2 or 3 drops of green food coloring
- 1 packet of Stevia
- 1½ cups crushed ice (8–12 ice cubes’ worth)
- Fat-free Reddi-wip
Instructions
- Combine light vanilla soymilk, fat-free vanilla ice cream, Coffee‑Mate vanilla creamer, peppermint extract, green food coloring, and Stevia in a blender.
- Add crushed ice and blend on high until smooth and frothy.
- Taste and adjust sweetness if needed, adding a bit more Stevia.
- Pour the shake into a chilled glass.
- Top with a dollop of Fat‑free Reddi‑Whip and a sprinkle of green sprinkles, if desired.
Notes
For a dairy‑free version, substitute the vanilla ice cream with a plant‑based vanilla frozen dessert. If you prefer a stronger mint flavor, increase the peppermint extract to ½ tsp. Store any leftover mixture (without ice) in the freezer for up to 2 days; blend with fresh ice before serving.
