Description

A hearty and flavorful beef stew made effortlessly in the slow cooker, infused with smoky BBQ flavors and tender vegetables.


Ingredients

  • 2 lbs beef stew meat, cut into chunks
  • 1 cup BBQ sauce
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups beef broth
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium-high heat and brown the beef chunks on all sides.
  2. Transfer the beef to the slow cooker.
  3. Add chopped onion, carrots, potatoes, and garlic.
  4. Pour in beef broth, BBQ sauce, diced tomatoes, and Worcestershire sauce.
  5. Sprinkle with smoked paprika, salt, and pepper.
  6. Stir to combine all ingredients well.
  7. Cover and cook on low for 7-8 hours or on high for 4-5 hours, until beef is tender.
  8. Stir before serving and adjust seasoning if needed.

Notes

For a thicker stew, mix 1 tbsp of cornstarch with 2 tbsp water and stir into the stew 30 minutes before serving.
