- 2 lbs beef stew meat, cut into chunks
- 1 cup BBQ sauce
- 1 can (14.5 oz) diced tomatoes
- 2 cups beef broth
- 3 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium-high heat and brown the beef chunks on all sides.
- Transfer the beef to the slow cooker.
- Add chopped onion, carrots, potatoes, and garlic.
- Pour in beef broth, BBQ sauce, diced tomatoes, and Worcestershire sauce.
- Sprinkle with smoked paprika, salt, and pepper.
- Stir to combine all ingredients well.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours, until beef is tender.
- Stir before serving and adjust seasoning if needed.
Notes
For a thicker stew, mix 1 tbsp of cornstarch with 2 tbsp water and stir into the stew 30 minutes before serving.
