- 6 medium green onions, chopped
- 4 stalks celery, chopped
- 1 cup barley
- ½ cup chopped fresh parsley
- 1 teaspoon dried thyme
Instructions
- Heat vegetable oil in large skillet over medium-high heat. Brown beef cubes in batches until seared on all sides.
- Transfer beef to slow cooker. Sprinkle with garlic powder and black pepper.
- Add 1 cup water to skillet to deglaze, scraping up browned bits. Pour liquid into slow cooker.
- Add remaining water, beef broth, carrots, green onions, celery, barley, parsley, and thyme to slow cooker.
- Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours, until beef is tender and barley is cooked through.
- Adjust seasoning if needed before serving. Garnish with extra parsley if desired.
