- 2 lbs boneless, skinless chicken breasts
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (15 oz) diced tomatoes with green chilies
- 1 cup salsa
- 1 packet taco seasoning
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 1 cup shredded cheddar or Mexican cheese blend (optional)
- Cooked rice, for serving
- Optional toppings: avocado, sour cream, chopped cilantro, lime wedges
Instructions
- Place chicken breasts in the bottom of the slow cooker.
- Add black beans, corn, diced tomatoes, salsa, taco seasoning, cumin, chili powder, salt, and pepper.
- Stir slightly to coat the chicken with the mixture.
- Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until chicken is cooked through and tender.
- Shred the chicken directly in the slow cooker and mix well into the sauce.
- Serve over cooked rice and top with cheese and any desired toppings.
